It is simply the best blackcurrant liqueur we can offer. What’s different from our other blackcurrant creams? This comes from the process used. Indeed, for this liqueur we make a sample on the maceration tank to use the virgin juice alone.
What is "virgin juice"?
The virgin juice is the first juice from maceration. In fact, to make the cream of blackcurrant, we use the technique of maceration. In other words, we put blackcurrant berries into a vat. Then we add neutral French alcohol and water. After about two months of maceration, we recover the first juice, the famous virgin juice. In the case of blackcurrant, it is the most concentrated juice on the aromatic level. Because then, we press the blackcurrant berries to get the juice from the press. Finally, we assemble the virgin juice and press juice to obtain the infusion. To this infusion, or alcoholic juice of blackcurrants, we add white sugar and voilà! The cream of blackcurrants is ready!
So for the Crème de Cassis de Dijon by Gérard Briottet, we use only virgin juice and not press juice. This gives an incredible power to the cream of cassis. Therefore, it is reserved for connoisseurs!
