From White to Blood Vine Peach: A Tale of Resilience and Terroir

A Threatened Burgundian Tradition

At Briottet, we are deeply rooted in our terroir. For generations, we have used the rare and exquisitely fragrant white vine peach of Burgundy to craft our liqueurs. Our White Vine Peach Liqueur, recognised for its 100% Côte-d’Or craftsmanship, has become a signature of our house.

However, this delicate fruit is highly vulnerable to climatic fluctuations, particularly spring frosts. In recent years, harvests have been nearly non-existent, including in 2022. Faced with this reality, Vincent and Claire Briottet (6th generation) had to innovate to preserve the unique quality and taste of our vine peach liqueur.

The Solution: The Blood Vine Peach

As master liquorists, our mission is to elevate fruits, flowers, and spices into exceptional liqueurs. Collaborating with our producers, we discovered the blood vine peach (or red vine peach), cultivated in the Monts du Lyonnais. Harvested at peak ripeness in late summer, it boasts an intense aroma and juicy flesh—perfect for a premium artisanal liqueur.

Artisanal Craftsmanship for an Exceptional Liqueur

A Long, Meticulous Maceration

To create this liqueur, we macerate whole peaches (skin, flesh, and stone) in French ultra-refined neutral alcohol for several months—far longer than our other liqueurs. Once the optimal maceration time is reached (our closely guarded secret!), we draw off the juice and press the fruit to extract a rich aromatic purée. After filtration and the addition of French white sugar, the liqueur is ready to be savoured.
