The Domaine des Guignottes, owned by Maison Goichot, is situated in the south of the Côte Chalonnaise, in Saône-et-Loire, in the village of Buxy. It covers an area of one hectare. The estate also produces, notably, a Montagny 1er Cru. When it comes to pairing liqueurs with wine, we always select a dry white wine. The wine must be able to enhance our liqueurs.
In Burgundy, it is traditional to pair Crème de Cassis with the Aligoté grape variety. For this wine, ageing takes place in stainless steel vats for around 12 months. This ensures there are no oaky notes that might alter the flavour of our liqueurs.
It has a pale yellow, slightly golden colour. On the nose, there are notes of white-fleshed fruit, peach, lemon, lime blossom, and sometimes even citrus. The palate is remarkably fresh, with iodine and salty notes, not to mention a fruity acidity that gives it a lovely length.
As for how to enjoy it, as you’ll have gathered, you can choose crème de cassis for the classic white wine and blackcurrant cocktail, but that’s not all! Do try other flavours such as raspberry, vine peach, chestnut or, why not, violet!
To make a traditional Blanc-Cassis or Kir®, use Aligoté white wine and Crème de cassis from Dijon. The proportions are: 1 part Crème de cassis to 3 parts white wine. If you’re using a high-quality Crème de cassis from Dijon, you can use 1 part Crème de cassis to 4 parts white wine. In fact, a high-quality blackcurrant liqueur has a very high fruit concentration. This concentration means you can use less liqueur in the glass whilst still retaining a rich aromatic intensity.
