Its inimitable taste comes from the blackcurrant berries of the variety "Noir de Bourgogne" ("Black of Burgundy") harvested in Burgundy very close to our company. Because a good blackcurrant liqueur is before a good fruit and LOTS of fruits!
How to make blackcurrant cream?
The blackcurrant berries are macerated in a mixture of neutral alcohol and water for about 10 weeks. In fact, the purpose of maceration is to extract all the aromatic power of this super fruit that is blackcurrant. The alcoholic juice thus obtained is called “infusion”. Finally, we add French white sugar to obtain the tasty Crème de Cassis de Dijon.
It is quite possible to make blackcurrant cream at home. When harvesting at the end of June- beginning of July, put as much alcohol for fruit as for blackcurrant berry: 1 litre of 40% fruit alcohol for 1 kg of blackcurrant berry. Cover the mixture tightly and away from light. After 8 to 10 weeks, collect the first juice. Press the blackcurrant berries into a clean cloth. Then, in a blender, put 600 ml of juice and 500 g of sugar to make about 1 liter of blackcurrant cream. Adjust the amount of sugar according to the amount of juice obtained. Do not heat because you would lose alcohol! You just have to be patient and wait for the sugar to dissolve through the action of the mixture. Cheers!
