Calisson with Dijon Blackcurrant Cream

Discover calissons made with Crème de Cassis de Dijon! A collaboration with Maison le Roy René. When two products from France's culinary heritage come together, the result is simply unique and delicious!

What's more, Le Roy René is a family business, founded in 1920 in Aix-en-Provence. It is renowned for its Provençal confectionery and, above all, its wonderful calissons! Now a century old, this company has stood the test of time by perpetuating its expertise. Like Maison Briottet, it holds the prestigious EPV Entreprise du Patrimoine Vivant (Living Heritage Company) label, synonymous with French excellence.

A true gastronomic emblem of the city of Aix-en-Provence, calissons are made from finely ground sweet almonds. The original recipe also includes Provençal melon and candied orange peel. Finally, the mixture is placed on a wafer base and covered with a thin layer of royal icing.

In this unique version with Crème de Cassis de Dijon, candied watermelon replaces the melon and our liqueur is incorporated into the recipe. The blackcurrant adds a fruity, slightly tart but above all delicious touch! The whole Briottet team loves it, so don't hesitate! Treats to give as gifts or simply to enjoy yourself!

And for the record, Crème de Cassis de Dijon has been protected by a geographical indication since 2013. Calisson is not yet protected, but it won't be long!
